OMG, I had LIME Ice Cream last night as part of the final course at Alinea. You shouldn't be able to make lime ice cream - the acid should curdle the cream, but the brilliant Grant Achatz figured out a way to do it. It was seriously the most amazing meal I've ever had. All 22 courses of it. With wine pairing. Crazy-good.
